RESTAURANT SUPERVISOR
• Maintain high cleanliness standards, ensuring that all the following are followed correctly: daily, weekly and monthly bar cleaning schedules
• Help ensure the implementation of all guidelines, procedures, controls and monitoring of systems of any Head Office employed external company are followed in relation to Health and Safety guidelines; i.e. FoodAlert
• Report any maintenance issues to your direct line manager in relation to all bar equipment
• Ensure all back bar displays including bottle displays, shelving, speed rails, fridges etc are prepared and maintained to the company standards and specifications
• Ensure all bar front of house areas are organized, arranged and maintained to the company standards and specifications
• Keep the bar area (front and back) and all related guest areas clean and presentable
• Ensure all mixed drinks and cocktails are prepared and served to the company standards and specifications at all times
• Ensure all wines are presented, prepared and served to the company standards and specifications
• Learn the full range of the drinks we offer including cocktail ingredients and methods of production
• Understand the full range of foods available and actively sell to our guests
• Ensure the presentation of the bar (front and back) is to the company standards and specifications
• Help ensure all bar standards are strictly adhered to
• Ensure strict adherence is kept to all Licensing, Health and Safety Issues and other relevant Legal Legislation and requirements
• To show excellence in all personal hygiene matters. To be clean shaven, hair tied back, nails clean, appropriate deodorant and perfume
• To wear the correct uniform in a clean, pressed and presentable manner
• Complete all other assigned duties or tasks
Sales and Profits
• Understand sales targets and their importance to the success of the business.
• Ensure all standards are adhered to including: recipe adherence on all mixed drinks and cocktails, to ensure that all mixed drinks are garnished correctly and that the correct glassware is used, ensures jiggers are utilised correctly (or free pour tests carried out) to ensure correct spirit usage and that all proper till ringing procedures and cash handling procedures are utilised
• Guarantee that any required AM and PM Cash Up Procedures are carried out as per company guidelines and that senior management is notified immediately of any discrepancies both positive and negative
• To assist in the minimisation of waste, comps, voids and discounts
• Ensures the correct procedures are followed when handling waste, comps, voids and discounts
• Ensures compliance of and participation in company and restaurant specific marketing programs
Qualification and Minimum Requirements Summary
• Has the ability to withstand extended periods of standing and walking
• Requires the ability to lift easily a case of beer
• Needs to display excellent communication skills especially to our guests
• Requires the ability to handle and count large amounts of cash with due diligence, the necessary levels of accuracy to complete precise transactions with confidence
• Requires the ability to work as a contributing member of the team
• Requires the ability to maintain positive working relationships and respect with all team members
• Has the ability to cope and function effectively in a fast paced environment
• Has the stamina to work efficiently and rapidly for long periods of time
• Requires the ability to take direction without question
• Requires satisfactory credit and criminal history
• Requires the ability to be on time in accordance with all rotas and to notify the Duty Management of any inability to achieve expected punctuality in good time so as to be enable adequate cover to be arranged
• To hold any relevant certificates in relation to the industry as required by law and also by company policy
• To attend any necessary courses as provided by the company
